Country Vegetable Soup

500g lean pork (pork loin), cubed
300g back bacon or Maltese sausage, sliced
1 Kg frozen mixed vegetables with cauliflower

1 tbps, tomato concentrate
500g Pumpkin, diced
4 tbps dried split peas
4 tbsp lentils
4 tbsp dried broad beans
2 large potatoes, cubed
500ml water

N.B. Items in bold are available from all MF outlets.

Soften lentils, beans and split peas in some water at least 2 hours before.

Place the frozen vegetables, pumpkin, potato cubes, lentils, beans and peas in a large pot. Add water and place over low heat.

When the water starts boiling add the pork and bacon (or sausage) and return to a low heat for another 1 1/2 to 2 hours, stirring occasionally.

Towards the end of the cooking add the tomato concentrate and stir well until the soup turns to a solid colour. Add salt and pepper to taste.

Remove from heat and serve immediately with croutons or traditional Maltese bread.
