Good Old Fashioned Chicken Salad

700g chicken breast fillets
100g sliced onions 
4 cups boiling water
4 cups chicken stock
1 long French bread loaf, sliced thinly
2 tbsp olive oil
1/2 cup mayonnaise
1/2 cup sour cream
2 tbsp lemon juice
4 trimmed celery stalks, slices thinly
3 large dill pickles, sliced thinly
2 tbsp fresh parsley, chopped
1 tbsp finely chopped fresh tarragon
1 large butter lettuce, leaves separated

Bring the water and stock to a boil in a large frying pan; poach chicken, covered, for about 10 minutes or until cooked through.
 
Cool chicken in liquid for 10 minutes to prevent from drying out. Slice fillets thinly and discard liquid. Meanwhile, brush both sides of bread slices with oil; toast under preheated grill until browned lightly both sides.
 
Whisk mayonnaise, cream and juice in a small bowl. Combine chicken with celery, onion pickle and herbs in a large bowl; toss gently to combine.
 
Place lettuce leaves on a serving platter; top with salad and bread, drizzle with mayonnaise mixture.
