Scallopine or Veal Slices al Marsala with Baked Veg

6 Slices of Veal about 50g each allowing 2 per person

A knob of unsalted Butter
Fresh or dry Salvia
Marsala Wine
A little Cream of Cornflour (to thicken sauce)
Chicken or meat cube dissolved in 1/2 pint of warm water
Seasoned flour

Toss each slice of veal in seasoned flour (using fresh or dry herbs especially salvia).
 
Fry lightly on both sides in oil. Put meat aside on plate.
 
Remove excess oil and put a knob of butter, add Marsala and meat broth, simmer gently and put slices of meat in pan again to absorb flavours for about 5 minutes.
 
Remove meat from pan and keep warm. Pour gravy into a bowl and keep warm.
 
 
Baked Vegetables
 
200g Sliced Onions
200g Sliced Mushrooms
200g Peas
150g cheddar Cheese, in cubes
200g Gammon, in cubes
1 Egg

In the same pan toss onions, mushrooms and peas. Fry for just 5 minutes.
 
In an ovenproof dish put mixed vegetables. Add cheese and gammon in cubes. Toss vegetables, cheese and gammon.
 
Beat 1 egg and spread on top and bake in hot oven for just 10-15 minutes.
 
Serve vegetables cut in square place meat on top and pour Marsala sauce over and around.
