Beef Olives (Bragioli)

8 Beef Knuckle or Veal steaks

4 slices rindless back Bacon
500g minced Beef
200g sliced Onions
300g Tomato Pulp
4 hard-boiled Eggs
3 tbsp Grated Cheese
Freshly Chopped Parsley
1/4 tsp Black Pepper
Mixed Herbs
 
N.B. Items in bold are available at all MF outlets.
 
Finely chop bacon, eggs and parsley. Mix well with the minced meat, cheese and seasoning. This will form the filling.
 
Put some filling on each slice of beef or veal. Roll the beef or veal slice around the stuffing and secure using a toothpick right through.
 
Cook the beef olives in a preheated oven for about 6 minutes at 170-180 degrees Celsius.
 
Heat some oil in a skillet. Fry the chopped onions. Add the tomato pulp, black pepper and mixed herbs. Cook for 5 minutes.
 
Add the sauce to the beef olives and continue cooking in the oven for about 60 minutes at a very low heat.
