Roast Lamb Shanks

4 Lamb Fore/Hind Shanks 
150g Sliced Onions 
Lemon juice
50 diced Garlic
Freshly ground pepper
Salt (optional)
N.B. Items in bold are available at all MF outlets.
Rub the shanks with lemon juice. Insert slivers of garlic into slits you make in the meat. Rub with mint sauce and salt if desired. Marinate in the fridge overnight surrounded with sliced onions. 
Heat oven to 400-450°F.  Put shanks into an UNCOVERED pan and place in the oven.
Cook from 1/2 hour to 1 hour depending on how you like your lamb. Serve with oven roasted potatoes or cream potatoes.
