Baked Glazed Gammon

3.5-4.5Kg Gammon 

300g Sliced Onions
200g Fresh Carrots
4 Celery stalks
2 Turnips
2 Parsnips
4 Parsley stalks
2 Bay Leaves
Peppercorns
225g white Granulated Sugar
300ml cider Vinegar
1 cup Brown Sugar
1/2 cup brown Breadcrumbs
1 tsp French Mustard

Soak ham in cold water for 24 hours then remove from water and put in a large saucepan with the vegetables, parsley, herbs, vinegar and white sugar. Cover with cold water and bring almost to a boiling point.
 
Time the cooking from the first moment bubbles start to reach the surface. Do not allow it ever to either reach simmering point, where it starts to cool off, or to boil. Allow 20 minutes of cooking time per 450g of ham, skimming off any brown froth that raises to the surface.
 
When cooking time is up, turn off the heat, pour in a cup of cold water to arrest the cooking, and leave the ham to cool. Lift the ham from the water and remove the skin. Mix the brown sugar and breadcrumbs to a paste adding on some mustard and a touch of vinegar. Smooth the mixture all over the surface of the ham, pressing well in.
 
Bake in a preheated oven at 180 degrees Celsius for 45 mins, basting half way with some extra vinegar. Leave for 15 mins in the oven with the heat turned off and the door slightly open before attempting to carve. Can be served with a mustard based sauce.
