Duck a l\\\'Orange

1 Whole Duck (1.8 - 2.2Kg)
2 tbsp Red Wine
2 tbsp Dry Orange Caracao 
1/2 oz. Flour
Rind and Juice of 3 Oranges
Salt and Pepper
Parsley and Orange slices
N.B. Items in bold are available at all MF outlets.
Clean the duck well and dry. Prick the skin with a fork and sprinkle with salt and pepper.
Place on a roasting tin and roast at 375°C for 100 - 130 minutes (approx. 30 mins per 500g). Remove the duck and keep it hot.
Remove all but 1 tbsp of fat in the roasting tin. Return to heat and stir in flour. Add orange juice, wine, and orange caracao. Stir until sauce thickens and remove from heat. season to taste.
Pour sauce over the duck and garnish with orange slices and lots of parsley.
