Stuffed Calamari

2-3 Large Calamari
100g sliced onions
100g Peas
1 Glass White Wine
200g polpa
1 Egg, hard boiled
3 slices Bread
Parsley
Capers
50g Olives, pitted
Mixed Herbs
50g diced Garlic
1 Fish Cube
Salt & Pepper

In a mixer put bread, parsley, capers, olives, egg, herbs, garlic, salt and pepper and whizz. Add a little olive oil to the mixture.
 
Fill calamari with this mixture and secure with a toothpick. Fry stuffed calamari in a little oil till they become pink all over.
 
Remove calamari from pan and to same pan add onions and fry. Add garlic, chopped olives, fish cube and wine. Allow wine to evaporate and add tomatoes.
 
Return calamari to pan and fry in sauce for 20-45 minutes till calamari are tender. Serve.
