Broad Bean Bruschetta

(Serves 4)
 
200g Broad Bean
40ml Extra Virgin Olive Oil
2 tbls Diced Garlic 
100g feta cheese
100g sundried tomatoes
basil finely chopped
8 pcs maltese ftiras

Bring a small saucepan of salted water to boil and cook the beans for 2 to 3 minutes. Refresh under cold running water and drain.  Peel broad beans and discard skins. 
  
Toss the broad beans, feta cheese, sundried tomatoes, garlic, olive oil and basil in a bowl. Season with salt & pepper and place in the refrigerator for 30 minutes before serving, this will help the flavors to develop.
 
Toast the ftiras for 1 to 2 minutes each side until lightly toasted. Divide the bread slices among serving plates. Spoon over the broad bean mixture.
