Cotolette di Vitello alle Mandorle

800g Veal Slices

200g sliced Onion
40g unsalted Butter
4 slices of soft White Bread
40g peeled Almonds
1 Red Pepper and 1 Green Pepper, finely chopped
Thyme, Sage
4 tablespoons Flour
1 Egg, beaten
Olive Oil
Salt and Pepper

Fry onion in olive oil with 3-4 sage leaves. When cooked, add red peppers, green peppers, broth, salt and pepper. Cook for about 12 minutes.
 
Place bread, almonds, thyme and sage in a mixer. Blend to a rough mixture.
 
Beat meat. Wrap veal slices around bread mixture and cover in flour, then in beaten egg and finally in bread crumbs, pressing well.
 
Fry in butter on both sides for 3-4 minutes in total. Drain on paper and serve with fried peppers.
