Chicken with Basil and Parmesan Crust

6 Chicken Breasts
8 oz Fresh White Breadcrumbs
4oz  Parmesan shavings
Chopped Parsley
4-6 Rashers of Bacon
200g diced Garlic
2 teaspoons Worcestshire Sauce
1 teaspoon English Mustard
A knob of unsalted Butter
 
N.B. Items in bold are available at all MF outlets.
 
In a bowl, mix breadcrumbs, grated cheese and parsley.
 
Chop bacon finely and fry in a little butter. Mix bacon with breadcrumb mixture.
 
In same pan melt butter, add garlic, worcestshire sauce and mustard. Dip each chicken breast in mustard sauce and place in a shallow ovenproof dish. Press breadcrumb mixture on each fillet.
 
Bake uncovered for 20-30 minutes in a moderate oven. When ready, cover in *basil sauce.
 
 
*Basil Sauce
 
3 fl oz. Olive Oil  
1 fl oz Vinegar
8 oz fresh Basil Leaves, finely chopped
2 fl oz Cream
 
Combine all Ingredients in a pan and heat through. DO NOT BOIL. Pour this green sauce on top of chicken fillets and serve.
