Courgettes and Tomatoes au Gratin

400g Sliced Courgettes
2 tbsp Olive Oil
200g diced Garlic
100g Sliced Onions
110g Cheddar, shredded or cut in thin slices
4 large tomatoes, skinned and sliced
4 level tbsp Parmesan Cheese shavings
1 tbsp fresh Basil, chopped or 1 tsp dried Oregano
Salt and freshly milled Black Pepper
N.B. Items in bold are available at all MF outlets.
Sautee courgettes with garlic and onions to a nice golden colour on each side.
Arrange layers of courgettes, cheese slices and sliced tomatoes overlapping each other  in an ovenproof gratin dish.
Finally sprinkle grated parmesan, basil, salt and pepper.
Bake in a high shelf in the oven for 30 minutes. Can be served with crusty bread or with fish or meat.
